Pomegranate Soup (A'ash-e Anar)

With winter fast approaching, what is a better cold day meal than a bowl of hearty, pomegranate soup? As beautiful as they are delicious, pomegranates are in season from October through January. Serving as a sign of fertility and rebirth, this highly celebrated fruit's skin and bark served medicinal purposes throughout history, although only the seeds are truly edible.

 

Today the power of this super food is just as strong--rich in antioxidants, vitamins, a good source of iron, and proven to lower bad cholesterol.

 

This soup has wonderful flavors that become even more intense and satisfying as the soup cooks. Hearty, healthy, tangy goodness!

Persian Noodle Soup with Fresh Greens & Beans

What do you do to satisfy the warm cravings of the heart?  I’ve learned that the simplest things in life are often the best.  Which is precisely why this soup really needs no introduction.  Not a long introduction, that is.  A’ash-e Reshteh or Persian Noodle Soup is one of the most simple, yet comforting and hearty soups out there.  Not to mention vegetarian and healthy.  My aunt has always made it just the way I like it… quick, simple, and delicious! 

Cuddling up next to the fireplace with a bowl of A’ash-e Reshteh and a nice glass of Merlot is a perfect way to spend a cold, breezy evening!
